Instructions:

  1. Place the pork, hominy, diced onion, and garlic into the crock-pot.
  2. Pour in the chicken broth and red enchilada or chile sauce.
  3. Add the cumin, oregano, smoked paprika, salt, and black pepper.
  4. Stir well to combine all ingredients.
  5. Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, until the pork is fork-tender.
  6. Taste and adjust seasoning as needed.
  7. Serve hot with your favorite toppings.

Variations

  • Use chicken thighs instead of pork for a lighter version.
  • Add blended dried chiles for deeper, more authentic chile flavor.
  • Make it greener by substituting green chile sauce and adding tomatillos.
  • Stir in a splash of lime juice just before serving for brightness.

Tips

  • Browning the pork before adding it to the slow cooker adds extra depth of flavor.
  • Rinse hominy well to remove excess starch and improve texture.
  • Posole tastes even better the next day as the flavors continue to develop.
  • Let guests customize their bowls with toppings for the best experience.
