Whipped Feta & Garlic Butter Bacon Smash Burgers

Instructions:

  1. Cook the bacon in a skillet over medium heat until crispy. Transfer to paper towels to drain and set aside.
  2. In a food processor, blend the feta cheese, cream cheese, olive oil, garlic, and black pepper until smooth and fluffy. Set aside.
  3. In a small bowl, mix the melted butter with the minced garlic and set aside.
  4. Divide the ground beef into four loose balls, handling the meat as little as possible.
  5. Heat a cast-iron skillet or griddle over high heat until very hot. Add the beef balls and smash them flat with a sturdy spatula. Season generously with salt and black pepper.
  6. Cook for 2 to 3 minutes per side, until deeply browned with crisp edges and a juicy center.
  7. Brush the patties with the garlic butter during the last minute of cooking.
  8. Toast the brioche buns with butter until golden.
  9. Assemble the burgers by spreading whipped feta on the bottom bun, adding the smash patty, topping with crispy bacon, and finishing with more whipped feta if desired. Place the top bun on and press gently.
  10. Serve immediately while hot and gloriously messy.
