Wet Burritos

Instructions:

  1. In a skillet, cook the ground beef and onion until browned. Drain any excess grease.
  2. Add the taco seasoning and 1/2 cup enchilada sauce. Simmer for 3–4 minutes.
  3. Warm the tortillas to make them easier to roll.
  4. Spread refried beans, if using, down the center of each tortilla.
  5. Divide the beef mixture evenly among the tortillas and roll into burritos.
  6. Place the burritos seam-side down in a baking dish.
  7. Pour the remaining enchilada sauce over the top.
  8. Sprinkle generously with cheese.
  9. Bake at 375°F (190°C) for 10–12 minutes, or until the cheese is melted and bubbly.
  10. Top with diced tomatoes and cilantro before serving.

Variations

  • Replace ground beef with shredded chicken, pulled pork, or turkey.
  • Mix cooked rice into the filling for added bulk.
  • Add sautéed bell peppers or jalapeños for extra flavor and heat.
  • Use green enchilada sauce for a tangier, milder version.

Tips

  • Warm the tortillas so they roll easily without cracking.
  • For extra saucy burritos, pour additional enchilada sauce over each serving before plating.
  • Bake uncovered to allow the cheese to melt and bubble beautifully.
  • Serve with sour cream or sliced avocado for a creamy finish.
