Instructions:
- In a skillet, cook the ground beef and onion until browned. Drain any excess grease.
- Add the taco seasoning and 1/2 cup enchilada sauce. Simmer for 3–4 minutes.
- Warm the tortillas to make them easier to roll.
- Spread refried beans, if using, down the center of each tortilla.
- Divide the beef mixture evenly among the tortillas and roll into burritos.
- Place the burritos seam-side down in a baking dish.
- Pour the remaining enchilada sauce over the top.
- Sprinkle generously with cheese.
- Bake at 375°F (190°C) for 10–12 minutes, or until the cheese is melted and bubbly.
- Top with diced tomatoes and cilantro before serving.

- Replace ground beef with shredded chicken, pulled pork, or turkey.
- Mix cooked rice into the filling for added bulk.
- Add sautéed bell peppers or jalapeños for extra flavor and heat.
- Use green enchilada sauce for a tangier, milder version.
