Verde Wet Burritos

Instructions:

  1. Heat the oil in a skillet and cook the beef or chicken with the diced onion until browned. Add the garlic, cumin, oregano, salt, and pepper.
  2. Stir in the beans and cook until warmed through and creamy.
  3. Warm the tortillas and fill each with the meat-bean mixture. Roll into burritos.
  4. In a saucepan, heat the salsa verde along with the diced green chiles.
  5. Place the burritos in a baking dish and pour the warm verde sauce over the top.
  6. Sprinkle generously with the shredded cheese.
  7. Broil or bake at 375°F (190°C) for 8–10 minutes, or until the cheese melts and the sauce bubbles.
  8. Garnish with fresh cilantro and serve hot.

Variations

  • Use shredded pork for a richer, slow-cooked flavor.
  • Add sautéed bell peppers or onions inside the burrito for extra texture.
  • Mix a handful of spinach into the filling for a nutrient boost.
  • Use pepper jack cheese to introduce a spicier, sharper top layer.

Tips

  • Add a splash of lime juice to the verde sauce for an extra-bright finish.
  • Warm tortillas before filling to prevent cracking and ensure easier rolling.
  • If you prefer a saucier burrito, thin the verde sauce with a little chicken broth before pouring.
  • Let the burritos rest for a couple of minutes before serving to help the sauce settle.
