Instructions:
- Heat the oil in a skillet and cook the beef or chicken with the diced onion until browned. Add the garlic, cumin, oregano, salt, and pepper.
- Stir in the beans and cook until warmed through and creamy.
- Warm the tortillas and fill each with the meat-bean mixture. Roll into burritos.
- In a saucepan, heat the salsa verde along with the diced green chiles.
- Place the burritos in a baking dish and pour the warm verde sauce over the top.
- Sprinkle generously with the shredded cheese.
- Broil or bake at 375°F (190°C) for 8–10 minutes, or until the cheese melts and the sauce bubbles.
- Garnish with fresh cilantro and serve hot.
