Instructions:
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine the cream cheese, shredded cheddar, garlic powder, smoked paprika, and black pepper until smooth.
- Slice the smoked sausage into bite-sized pieces and cut a small slit into each piece without slicing all the way through.
- Fill each sausage piece with a small amount of the cheese mixture and insert a slice of jalapeño.
- Wrap each stuffed sausage piece with half a slice of bacon and secure it with a toothpick.
- Arrange the bites on a baking sheet lined with foil or place them on a rack for even cooking.
- Bake for 20–25 minutes, or until the bacon is crisp and golden.
- Remove from the oven and allow them to cool slightly before serving.
Variations
- BBQ Glazed Bites: Brush with barbecue sauce during the last 5 minutes for a sweet and smoky finish.
- Extra Spicy Version: Leave jalapeño seeds in or use serrano peppers for more heat.
- Maple Bacon Twist: Brush with maple syrup instead of BBQ sauce for a sweet-savory contrast.
- Cheese Swap: Use pepper jack or smoked gouda for a different flavor profile.
Tips
- Use a wire rack over the baking sheet to allow excess fat to drip away and help the bacon crisp evenly.
- Avoid overstuffing to prevent the cheese from leaking during baking.
- Secure tightly with toothpicks to keep everything intact while cooking.
- Serve warm for the best texture and flavor, as the cheese filling is at its creamiest right out of the oven.
