Instructions:
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the ground beef over medium heat until browned. Drain excess grease.
- Stir in the taco seasoning, ranch seasoning, and drained Rotel. Simmer for 2 to 3 minutes to blend the flavors.
- Spoon the seasoned beef mixture evenly into the mini tortilla cups.
- Sprinkle shredded cheddar cheese on top of each bite.
- Bake for 5 to 7 minutes, or until the cheese is fully melted.
- Garnish with chopped cilantro and diced tomatoes just before serving.
Variations
- Swap cheddar for pepper jack or a Mexican blend for added spice.
- Use ground turkey or chicken for a lighter version.
- Add black beans or corn to the filling for extra texture.
- Bake wonton wrappers in a mini muffin tin for homemade, extra-crunchy cups.
- Top with chopped jalapeños or pickled onions for a punchier finish.
Tips
- Drain the Rotel well to prevent the cups from getting soggy.
- Fill the cups just before baking so they stay crisp.
- Serve immediately—these bites are best when hot and melty.
- Add sour cream, guacamole, or salsa on top for extra creaminess and flavor.
- For large crowds, double the recipe; they disappear fast.
