Instructions:
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Stir in the taco seasoning and water. Simmer for 2 to 3 minutes, then mix in the corn.
- In a bowl, combine the soup, sour cream, and 1 cup of the shredded cheese until smooth.
- Spread half of the crushed Doritos evenly across the bottom of the prepared baking dish.
- Spoon the beef mixture over the Doritos, then spread the creamy cheese mixture evenly on top.
- Sprinkle the remaining cheese and Doritos over the casserole.
- Bake for 20 to 25 minutes, until bubbly and lightly golden.
- Remove from the oven and garnish with diced tomatoes, shredded lettuce, green onions, and sour cream if desired before serving.
Variations :
- Use ground turkey or chicken instead of beef for a lighter version.
- Swap cheddar for a Mexican cheese blend or pepper jack for extra heat.
- Add black beans or sliced olives for more texture and flavor.
