Instructions:
- In a small saucepan, combine the apple cider vinegar, water, sugar, honey, and salt.
- Bring the mixture to a gentle simmer over medium heat, stirring until the sugar fully dissolves.
- Add the black pepper, chili flakes, mustard seeds, smoked paprika, and smashed garlic. Stir to combine.
- Remove from heat and allow the brine to cool slightly.
- Place the grapes in a clean glass jar.
- Pour the warm brine over the grapes, ensuring they are fully submerged.
- If using, add a small splash of sparkling water for a fizzy effect.
- Seal the jar and refrigerate for at least 12–24 hours before serving.
- Serve chilled for the best flavor and texture.
Variations
- Citrus Burst: Add lemon or orange zest for a brighter, fresher flavor.
- Extra Heat: Increase chili flakes or add sliced fresh chili peppers.
- Herb Infusion: Add a sprig of rosemary or thyme for an aromatic twist.
- Savory Edge: Include a few slices of red onion for added depth.
Tips
- Use firm, fresh grapes for the best texture after pickling.
- Allow at least 24 hours for the flavors to fully develop.
- Chill thoroughly before serving—cold enhances both the flavor and the fizzy effect.
- Lightly freeze before serving for a refreshing, almost candy-like texture.
