Instructions:
- In a saucepan, combine the apple cider vinegar, water, sugar, honey, and salt.
- Bring the mixture to a gentle simmer over medium heat, stirring until the sugar fully dissolves.
- Add the black pepper, chili flakes, smoked paprika, mustard seeds, grated ginger, and smashed garlic. Stir to combine.
- Add the berries and simmer gently for 5–7 minutes, just until they begin to soften and absorb the flavors.
- Remove the saucepan from heat and allow the mixture to cool to room temperature.
- Transfer the berries and brine into a clean glass jar.
- Seal and refrigerate for at least 24 hours before serving to allow the flavors to fully develop.
Variations
- Citrus Twist: Add orange or lemon zest for a brighter, fresher flavor profile.
- Herb-Infused: Include a sprig of rosemary or thyme for an aromatic, savory edge.
- Extra Heat: Increase chili flakes or add sliced fresh chili peppers for a more pronounced kick.
- Low-Sugar Option: Reduce the sugar slightly and rely more on honey for a natural sweetness.
Tips
- Use fresh, firm berries for the best texture; frozen berries will be softer but equally flavorful.
- Do not overcook the berries, as they can become too soft and lose their structure.
- Store in an airtight glass container to maintain freshness and prevent flavor transfer.
- These berries improve over time—allowing them to sit for 2–3 days will deepen their flavor even further.
