Strawberry Mango Fire Jam

Instructions:

  1. Place strawberries and mango in a pot and mash lightly for a chunky texture.
  2. Add sugar and lemon juice, then bring the mixture to a gentle boil.
  3. Stir in minced pepper and lime zest.
  4. Add pectin and boil hard for 1 minute.
  5. Reduce heat and simmer for 10–12 minutes, or until thickened and glossy.
  6. Taste and adjust sweetness or heat as desired.
  7. Pour hot jam into sterile jars and seal if canning, or let cool and refrigerate.

Variations

  • Add crushed pineapple for even more tropical complexity.
  • Replace jalapeños with serranos for a sharper heat.
  • Add a touch of vanilla for a smooth, rounded finish.

Tips

  • For a brighter flavor, stir in a squeeze of fresh lime at the end.
  • If you prefer a smoother jam, blend half the mixture before adding pectin.
  • Use fully ripe mangoes for maximum sweetness and a silkier texture.
