Smoky Chipotle Peach Jam

Instructions:

  1. Combine peaches, sugar, and lemon juice in a large pot. Mash lightly to keep a chunky texture.
  2. Bring the mixture to a boil over medium heat, stirring often to prevent sticking.
  3. Add minced chipotle peppers and adobo sauce, stirring to incorporate the smoky flavor.
  4. Add pectin and boil the mixture hard for 1 minute.
  5. Reduce heat and simmer for 10–12 minutes, until thickened and glossy.
  6. Taste and adjust sweetness or heat as needed.
  7. Ladle hot jam into sterile jars. Seal for canning or cool and refrigerate.

Variations

  • Add a splash of bourbon for a sophisticated twist.
  • Mix in a handful of diced pineapple for extra tropical sweetness.
  • Swap chipotle for roasted hatch chiles for a different kind of smoky heat.

Tips

  • Use fully ripe peaches — their natural sweetness enhances the final flavor.
  • If you prefer a smoother jam, blend half the mixture before adding pectin.
  • Brush onto grilled chicken, pork, or ribs during the last few minutes of cooking for a caramelized, smoky glaze.
