Instructions:
- Combine peaches, sugar, and lemon juice in a large pot. Mash lightly to keep a chunky texture.
- Bring the mixture to a boil over medium heat, stirring often to prevent sticking.
- Add minced chipotle peppers and adobo sauce, stirring to incorporate the smoky flavor.
- Add pectin and boil the mixture hard for 1 minute.
- Reduce heat and simmer for 10–12 minutes, until thickened and glossy.
- Taste and adjust sweetness or heat as needed.
- Ladle hot jam into sterile jars. Seal for canning or cool and refrigerate.
Variations
- Add a splash of bourbon for a sophisticated twist.
- Mix in a handful of diced pineapple for extra tropical sweetness.
- Swap chipotle for roasted hatch chiles for a different kind of smoky heat.
Tips
- Use fully ripe peaches — their natural sweetness enhances the final flavor.
- If you prefer a smoother jam, blend half the mixture before adding pectin.
- Brush onto grilled chicken, pork, or ribs during the last few minutes of cooking for a caramelized, smoky glaze.
