Instructions:
- Place the pork tenderloin into the slow cooker.
- In a bowl, whisk together soy sauce, honey, brown sugar, garlic, ginger if using, vinegar, sesame oil, and black pepper.
- Pour the sauce over the pork, turning the meat to coat evenly.
- Cover and cook on LOW for 4 to 5 hours or on HIGH for 2 to 3 hours, until the pork is tender and cooked through.
- Remove the pork from the slow cooker and let it rest for 5 minutes before slicing.
- If a thicker glaze is desired, transfer the cooking liquid to a saucepan, bring to a simmer, and whisk in the cornstarch slurry until thickened.
- Spoon the glaze over the sliced pork and garnish with sesame seeds and green onions before serving.
Variations
- Add sliced bell peppers or onions to the slow cooker for extra flavor and texture.
- Replace honey with maple syrup for a slightly different sweetness.
- Stir in a pinch of red pepper flakes or chili paste for gentle heat.
- Use pork loin instead of tenderloin, adjusting cook time slightly longer.
Tips
- Use low-sodium soy sauce to prevent the glaze from becoming too salty.
- Do not overcook; pork tenderloin stays juiciest when cooked just until tender.
- Let the meat rest before slicing to keep the juices locked in.
- Spoon extra glaze over rice or vegetables so none of the flavor goes to waste.
