Slow Cooker Chicken Noodle Soup

Instructions:

  1. Add chicken, carrots, celery, onion, garlic, broth, thyme, parsley, bay leaf, salt, and pepper to the slow cooker.
  2. Cook on LOW for 7–8 hours or HIGH for 4 hours.
  3. Remove the chicken, shred it, and return it to the pot.
  4. Add the egg noodles and cook on HIGH for 15–20 minutes, or until tender.
  5. Adjust seasoning to taste and serve with fresh parsley.

Variations

  • Use rotisserie chicken and reduce cook time to 2–3 hours on LOW.
  • Add peas, corn, or spinach during the last 10 minutes.
  • Substitute egg noodles with rotini, ditalini, or gluten-free pasta.
  • Add a spoonful of cream for a richer, silkier broth.

Tips

  • For clearer broth, skim off any foam during cooking.
  • Add noodles only at the end to prevent them from getting mushy.
