Instructions:
- Add chicken, carrots, celery, onion, garlic, broth, thyme, parsley, bay leaf, salt, and pepper to the slow cooker.
- Cook on LOW for 7–8 hours or HIGH for 4 hours.
- Remove the chicken, shred it, and return it to the pot.
- Add the egg noodles and cook on HIGH for 15–20 minutes, or until tender.
- Adjust seasoning to taste and serve with fresh parsley.
Variations
- Use rotisserie chicken and reduce cook time to 2–3 hours on LOW.
- Add peas, corn, or spinach during the last 10 minutes.
- Substitute egg noodles with rotini, ditalini, or gluten-free pasta.
- Add a spoonful of cream for a richer, silkier broth.
Tips
- For clearer broth, skim off any foam during cooking.
- Add noodles only at the end to prevent them from getting mushy.
- A squeeze of lemon brightens the whole pot instantly.
