Instructions:
- Preheat the oven to 375°F (190°C).
- In a skillet, brown the ground beef with the onion until fully cooked. Drain excess fat.
- Add the garlic, cumin, smoked paprika, chili powder, salt, and pepper. Cook for 1 minute to bloom the spices.
- Pour in the red chile sauce and simmer for 3–4 minutes to blend flavors.
- Lightly grease a baking dish and lay down the first layer of tortillas.
- Spread one-third of the beef mixture over the tortillas and sprinkle with cheese.
- Repeat the layering (tortillas → beef → cheese) two more times.
- Finish with a generous layer of cheese on top.
- Bake for 25–30 minutes, or until bubbly and lightly golden.
- Let rest for 5 minutes before slicing. Add toppings as desired.
