Ruth’s Chris–Style Spinach Rockefeller Bake

Instructions:

  1. Preheat the oven to 400°F (200°C). Lightly grease a small baking dish or oven-safe skillet.
  2. Squeeze all excess moisture from the spinach and set aside. This step is essential for a creamy, not watery, result.
  3. Melt the butter in a skillet over medium heat. Add the garlic and sauté for about 30 seconds, until fragrant.
  4. Stir in the heavy cream and cream cheese, cooking and stirring until smooth and fully combined.
  5. Add the Parmesan cheese, salt, black pepper, and nutmeg if using. Stir until the sauce is creamy and well blended.
  6. Fold in the spinach until evenly coated in the sauce.
  7. Transfer the mixture to the prepared baking dish and sprinkle the mozzarella evenly over the top.
  8. Add breadcrumbs or crushed crackers if using.
  9. Bake for 15 to 20 minutes, until bubbly and lightly golden on top.
  10. Serve hot.

Variations :

  • Add sautéed mushrooms for extra depth and texture.
  • Use Gruyère cheese instead of mozzarella for a more classic Rockefeller flavor.
  • Stir in a splash of white wine for added complexity.
