Instructions:
- Preheat the oven to 400°F (200°C). Lightly grease a small baking dish or oven-safe skillet.
- Squeeze all excess moisture from the spinach and set aside. This step is essential for a creamy, not watery, result.
- Melt the butter in a skillet over medium heat. Add the garlic and sauté for about 30 seconds, until fragrant.
- Stir in the heavy cream and cream cheese, cooking and stirring until smooth and fully combined.
- Add the Parmesan cheese, salt, black pepper, and nutmeg if using. Stir until the sauce is creamy and well blended.
- Fold in the spinach until evenly coated in the sauce.
- Transfer the mixture to the prepared baking dish and sprinkle the mozzarella evenly over the top.
- Add breadcrumbs or crushed crackers if using.
- Bake for 15 to 20 minutes, until bubbly and lightly golden on top.
- Serve hot.
