Ruth’s Chris Seared Shrimp Cocktail

Instructions:

  1. Pat the shrimp dry and season with paprika, garlic powder, salt, and black pepper.
  2. Heat the olive oil and butter in a skillet over medium-high heat.
  3. Add the shrimp in a single layer and sear for 1–2 minutes per side, until lightly golden and just cooked through.
  4. Transfer the shrimp to a plate and let cool slightly.
  5. Serve chilled or slightly warm with lemon wedges and cold cocktail sauce.

Variations

  • Add a pinch of cayenne for a spicy kick.
  • Sear with minced garlic for more aromatic depth.
  • Use smoked paprika to add a subtle smoky note.
  • Serve with chimichurri or garlic-aioli for a twist on classic cocktail sauce.

Tips

  • Don’t overcook the shrimp—they become rubbery quickly.
  • Pat shrimp very dry for the best possible sear.
  • Squeeze fresh lemon over the shrimp immediately after searing for bright, clean flavor.
  • Chill the cocktail sauce thoroughly so the contrast with warm shrimp is refreshing and bold.
