Instructions:
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss the halved potatoes with olive oil, melted butter, minced garlic, salt, black pepper, and Italian seasoning until evenly coated.
- Arrange the potatoes cut-side down on the prepared baking sheet in a single layer.
- Roast for 30 to 35 minutes, until golden brown and fork-tender.
- Remove from the oven and immediately sprinkle the grated Parmesan evenly over the hot potatoes.
- Return to the oven for 5 minutes, until the cheese melts and lightly crisps.
- Garnish with fresh parsley and serve warm.
