Redneck Goblin Snacks

Instructions:

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper or foil.
  2. In a large mixing bowl, combine the ground sausage, shredded cheddar, cream cheese, biscuit mix, diced jalapeños, crumbled bacon, garlic powder, onion powder, paprika, and black pepper.
  3. Mix thoroughly until all ingredients are evenly incorporated into a thick, sticky mixture.
  4. Roll the mixture into small, bite-sized balls using your hands or a scoop.
  5. Place the balls onto the prepared baking sheet, leaving space between each one.
  6. Bake for 18–20 minutes, or until golden brown and cooked through.
  7. Remove from the oven and let cool slightly before serving.

Variations

  • Extra Loaded: Add more bacon or a mix of cheeses for an even richer bite.
  • Spicy Upgrade: Include diced serrano peppers or a pinch of cayenne for extra heat.
  • BBQ Style: Mix a tablespoon of BBQ sauce into the batter for a smoky-sweet twist.
  • Breakfast Version: Use breakfast sausage and serve with maple dipping sauce.

Tips

  • If the mixture is too sticky, lightly oil your hands to make rolling easier.
  • Cook bacon until crisp before adding to maintain texture in the bites.
  • Avoid overcrowding the pan to ensure even browning.
  • Serve warm with spicy ranch, BBQ sauce, or honey mustard for the best flavor experience.
