Instructions:
- Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
- Arrange the sausage pieces and pineapple chunks evenly in the dish.
- In a bowl, whisk together the brown sugar, pineapple juice, soy sauce, Dijon mustard, garlic powder, and black pepper until smooth.
- Pour the glaze over the sausage and pineapple, tossing gently to coat.
- Bake uncovered for 25–30 minutes, stirring once halfway through, until the glaze is thick, bubbly, and caramelized.
- Remove from the oven and let rest for 5 minutes to allow the glaze to set.
- Transfer to a serving dish, garnish if desired, and serve warm.
