Instructions:
- Preheat the oven to 325°F (160°C). Lightly butter a baking dish and set aside.
- In a mixing bowl, whisk the eggs and sugar together until smooth and lightly creamy.
- Add the milk, vanilla extract, nutmeg, and salt, whisking until fully combined.
- Pour the custard mixture into the prepared baking dish.
- Place the dish inside a larger roasting pan and carefully add hot water until it reaches halfway up the sides of the custard dish.
- Bake for about 40 minutes, until the custard is set around the edges and gently jiggles in the center.
- Remove from the oven and allow to cool slightly. Sprinkle a light pinch of nutmeg over the top before serving.
Variations
- Add a pinch of cinnamon or cloves for extra holiday warmth.
- Substitute part of the milk with half-and-half for a richer custard.
- Use brown sugar instead of white sugar for a deeper, caramel-like flavor.
- Stir in a splash of rum or brandy for an adult version.

- Do not overbake; the custard should still have a slight wobble in the center.
- Always use a water bath to ensure a smooth, creamy texture.
- Freshly grated nutmeg provides the best aroma and flavor.
