Nutmeg-Scented Winter Custard

Instructions:

  1. Preheat the oven to 325°F (160°C). Lightly butter a baking dish and set aside.
  2. In a mixing bowl, whisk the eggs and sugar together until smooth and lightly creamy.
  3. Add the milk, vanilla extract, nutmeg, and salt, whisking until fully combined.
  4. Pour the custard mixture into the prepared baking dish.
  5. Place the dish inside a larger roasting pan and carefully add hot water until it reaches halfway up the sides of the custard dish.
  6. Bake for about 40 minutes, until the custard is set around the edges and gently jiggles in the center.
  7. Remove from the oven and allow to cool slightly. Sprinkle a light pinch of nutmeg over the top before serving.

Variations

  • Add a pinch of cinnamon or cloves for extra holiday warmth.
  • Substitute part of the milk with half-and-half for a richer custard.
  • Use brown sugar instead of white sugar for a deeper, caramel-like flavor.
  • Stir in a splash of rum or brandy for an adult version.

Tips

  • Do not overbake; the custard should still have a slight wobble in the center.
  • Always use a water bath to ensure a smooth, creamy texture.
  • Freshly grated nutmeg provides the best aroma and flavor.
  • Serve warm with honey or maple syrup, or chill and top with whipped cream for a festive finish.
