Navajo Tacos with Green Chile

Instructions:

  1. In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
  2. Stir in the taco seasoning and water. Simmer for about 5 minutes, until the mixture thickens.
  3. In a small saucepan, warm the beans and stir in the roasted green chile.
  4. Heat the fry bread according to package directions or warm in the oven until slightly crisp.
  5. Place each piece of fry bread on a serving plate and spread a layer of beans over the top.
  6. Spoon seasoned ground beef over the beans, then sprinkle generously with shredded cheese.
  7. Top with shredded lettuce and diced tomatoes.
  8. Add sour cream or other desired toppings and serve immediately.

Variations :

  • Substitute shredded chicken or carne asada for the ground beef.
  • Add sliced avocado or guacamole for extra creaminess.
  • Use pepper jack cheese for a spicier finish.
