Instructions:
- Heat the oil in a skillet over medium-high heat and fry the tortilla strips until crisp and golden. Remove and set aside.
- In the same skillet, sauté the onions, bell peppers, jalapeño, and tomatoes until softened.
- Add the eggs directly into the skillet and scramble gently into the vegetables.
- When the eggs are halfway set, fold in the crispy tortilla strips.
- Sprinkle the shredded cheese on top and cover the skillet until the cheese melts.
- Finish with cilantro, avocado, salsa, or any toppings you love.
Variations
- Add cooked chorizo or bacon for a heartier, smoky version.
- Stir in diced zucchini or mushrooms for extra vegetables.
- Swap cheddar for pepper jack to increase the heat.
- Add a splash of cream to the eggs for extra fluffiness.
Tips
- Fry tortilla strips in bacon fat for richer flavor.
- Add a spoonful of salsa while cooking the eggs to infuse them with restaurant-style depth.
- Don’t overcook the eggs—soft and creamy is ideal for migas.
- Serve immediately to enjoy the contrast of crispy tortillas and tender eggs.
