Mexican Wet Beef Burrito with Green Sauce

Instructions:

  1. Preheat the oven to 375°F (190°C). Lightly grease a baking dish.
  2. In a skillet over medium heat, cook the ground beef and onion until browned and fully cooked. Drain excess grease.
  3. Add garlic, cumin, chili powder, oregano, salt, and black pepper. Stir and cook for 1 to 2 minutes until fragrant.
  4. Warm the tortillas slightly so they are soft and pliable.
  5. Spoon the beef filling down the center of each tortilla and roll tightly into burritos.
  6. Place burritos seam-side down in the prepared baking dish.
  7. Pour the green enchilada sauce evenly over the burritos, fully coating them.
  8. Sprinkle shredded cheese generously over the top.
  9. Bake for 20 to 25 minutes, until the sauce is bubbly and the cheese is melted.
  10. Remove from the oven and top with sour cream and fresh cilantro before serving.

Variations

  • Add refried beans or Spanish rice inside the burritos for extra heartiness.
  • Use shredded beef or shredded chicken instead of ground beef.
  • Swap green sauce for red enchilada sauce for a different flavor profile.
  • Add sliced jalapeños for a spicy kick.

Tips

  • Lightly pan-searing the burritos before baking adds a golden exterior and deeper flavor.
  • Do not overfill the tortillas to prevent them from tearing.
  • Cover loosely with foil if the cheese browns too quickly.
  • Let the burritos rest for a few minutes after baking so they hold together better when served.
