Instructions:
- Preheat the oven to 375°F (190°C). Lightly grease a baking dish.
- In a skillet over medium heat, cook the ground beef and onion until browned and fully cooked. Drain excess grease.
- Add garlic, cumin, chili powder, oregano, salt, and black pepper. Stir and cook for 1 to 2 minutes until fragrant.
- Warm the tortillas slightly so they are soft and pliable.
- Spoon the beef filling down the center of each tortilla and roll tightly into burritos.
- Place burritos seam-side down in the prepared baking dish.
- Pour the green enchilada sauce evenly over the burritos, fully coating them.
- Sprinkle shredded cheese generously over the top.
- Bake for 20 to 25 minutes, until the sauce is bubbly and the cheese is melted.
- Remove from the oven and top with sour cream and fresh cilantro before serving.

- Add refried beans or Spanish rice inside the burritos for extra heartiness.
- Use shredded beef or shredded chicken instead of ground beef.
- Swap green sauce for red enchilada sauce for a different flavor profile.
