Mexican Carne Asada Marinade

Instructions:

  1. Whisk together the orange juice, lime juice, soy sauce, olive oil, vinegar, and Worcestershire sauce.
  2. Add the garlic, jalapeño slices, cilantro, pepper, oregano, cumin, and salt. Mix thoroughly.
  3. Place the steak in a large dish or zip-top bag and pour the marinade over it.
  4. Refrigerate and marinate for 2–4 hours, or overnight for maximum flavor.
  5. Grill over high heat for 3–5 minutes per side, until charred and juicy.
  6. Let rest for 5 minutes, then slice thinly against the grain.
  7. Serve with rice, beans, tortillas, and your favorite toppings.

Variations

  • Add chili flakes or serrano peppers for more heat.
  • Swap soy sauce for Maggi seasoning for a classic taquería depth.
  • Add a splash of pineapple juice for sweetness and tenderizing power.
  • Use the marinade for chicken thighs or pork chops as well.

Tips

  • Add 1 tablespoon of beer to the marinade for extra tenderness and deeper flavor.
  • Don’t over-marinate — the citrus can break down the meat too much.
  • Grill over very high heat for the best char and juicy interior.
  • Always slice against the grain for the most tender results.
