Melt-In-Your-Mouth Chicken

Instructions:

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. Arrange the chicken breasts in the baking dish and season both sides with salt and black pepper.
  3. In a mixing bowl, combine the mayonnaise, shredded cheese, garlic powder, onion powder, paprika, and parsley until smooth.
  4. Spread the mixture evenly over the top of each chicken breast.
  5. Bake uncovered for 30 to 35 minutes, until the chicken is cooked through and the topping is golden and bubbly.
  6. Let the chicken rest for about 5 minutes before serving to lock in the juices.

Variations

  • Use Greek yogurt instead of mayonnaise for a lighter, tangier version.
  • Add a pinch of cayenne pepper or red pepper flakes for heat.
  • Mix in grated Parmesan for extra depth of flavor.
  • Top with crushed Ritz crackers or breadcrumbs for a crunchy finish.

Tips

  • Pound the chicken breasts to even thickness for more uniform cooking.
  • Avoid overbaking, as chicken breasts can dry out quickly.
  • Use freshly shredded cheese for the best melting texture.
  • This dish pairs perfectly with mashed potatoes, rice, or roasted vegetables.
