Loaded Potato Meatloaf

Instructions:

  1. Preheat the oven to 375°F (190°C). Lightly grease a loaf pan or baking dish.
  2. In a large bowl, combine the ground beef, mashed potatoes, sour cream, egg, milk, breadcrumbs, garlic powder, onion powder, salt, and black pepper. Mix gently until just combined.
  3. Fold in the shredded cheddar cheese and crumbled bacon.
  4. Shape the mixture into a loaf and place it into the prepared pan.
  5. Bake uncovered for 40 minutes.
  6. Remove the meatloaf from the oven and sprinkle the cheese evenly over the top.
  7. Return to the oven and bake for an additional 10 to 15 minutes, until the cheese is melted, bubbly, and lightly golden.
  8. Let the meatloaf rest for 5 to 10 minutes before slicing. Garnish with parsley or green onions before serving.
