Instructions:
- Preheat the oven to 375°F (190°C). Lightly grease a loaf pan or baking dish.
- In a large bowl, combine the ground beef, mashed potatoes, sour cream, egg, milk, breadcrumbs, garlic powder, onion powder, salt, and black pepper. Mix gently until just combined.
- Fold in the shredded cheddar cheese and crumbled bacon.
- Shape the mixture into a loaf and place it into the prepared pan.
- Bake uncovered for 40 minutes.
- Remove the meatloaf from the oven and sprinkle the cheese evenly over the top.
- Return to the oven and bake for an additional 10 to 15 minutes, until the cheese is melted, bubbly, and lightly golden.
- Let the meatloaf rest for 5 to 10 minutes before slicing. Garnish with parsley or green onions before serving.
