Lemon–Chili Honey Sunshine Jam

Instructions:

  1. In a saucepan, combine the lemon juice, lemon zest, honey, sugar, and water. Stir to combine.
  2. Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring occasionally.
  3. Add the chili flakes, cayenne pepper (if using), grated ginger, and a pinch of salt. Stir well.
  4. Allow the mixture to simmer for 10–15 minutes, stirring occasionally, until it becomes slightly thickened and glossy.
  5. If a thicker consistency is desired, mix the cornstarch with 1 tablespoon of water to create a slurry, then stir it into the jam. Cook for an additional 1–2 minutes until thickened.
  6. Remove from heat and allow the jam to cool. It will continue to thicken as it rests.
  7. Transfer to a clean jar and refrigerate until ready to use.

  • Extra Fiery Version: Increase chili flakes or add finely chopped fresh chili peppers.
