Instructions:
- Preheat the oven to 375°F (190°C).
- Cut a deep pocket into the side of each chicken breast, being careful not to cut all the way through.
- In a bowl, mix the bacon, shredded cheese, and cream cheese if using, until combined.
- Stuff each chicken breast generously with the bacon and cheese mixture, securing with toothpicks if needed.
- Season the chicken on all sides with garlic powder, onion powder, paprika, salt, and black pepper.
- Heat the olive oil and butter in an oven-safe skillet over medium-high heat.
- Sear the chicken for 3 to 4 minutes per side, until golden brown.
- Transfer the skillet to the oven and bake for 15 to 18 minutes, until the chicken is cooked through and the cheese is melted.
- Remove toothpicks, garnish with parsley, and serve hot.
Variations
- Use pepper jack cheese for a spicy twist.
- Add sautéed spinach or mushrooms to the stuffing for extra flavor.
- Wrap the stuffed chicken with bacon before searing for even more richness.
- Substitute turkey breasts for a lighter option.
Tips
- Pound the chicken lightly for even thickness before stuffing.
- Do not overstuff, as the filling can leak during cooking.
- Let the chicken rest for 5 minutes before serving to retain juices.
- Use a meat thermometer and cook chicken to an internal temperature of 165°F (74°C).
