Jalapeño Popper Egg Rolls

Instructions:

  1. In a bowl, mix the cream cheese, shredded cheese, jalapeños, bacon or sausage (if using), garlic powder, and onion powder until well combined.
  2. Lay an egg roll wrapper flat and place 2–3 tablespoons of filling in the center.
  3. Fold the sides inward, then roll tightly, sealing the edge with a dab of water.
  4. Heat oil to 350°F (175°C).
  5. Fry the egg rolls for 3–4 minutes per side, or until golden brown and crispy.
  6. Transfer to paper towels to drain, and serve hot.

Variations

• Add chopped green onions for extra flavor and freshness.
• Use pepper jack cheese for more heat.
• Mix in a spoonful of ranch seasoning for a different flavor profile.
• Bake at 400°F (205°C) for 12–15 minutes, brushing lightly with oil, for a lighter option.

Tips

• Roll tightly to prevent cheese from leaking during frying.
• Keep wrappers covered with a damp towel to prevent drying while assembling.
• Test one egg roll first to ensure your oil is the right temperature.
• Serve with ranch, chipotle mayo, or jalapeño-cilantro dip for next-level dipping.
