Instructions:
- In a large pot, combine the butter, milk or cream, jalapeños, and seasonings.
- Heat over medium until the butter melts and the mixture is hot. Avoid boiling.
- Add the corn and let it gently simmer in the buttery bath for 10–15 minutes.
- Rotate the corn occasionally so each ear absorbs maximum flavor.
- Serve hot, spooning extra jalapeño butter from the pot over each ear.
Variations
- Add a few garlic cloves for a savory, aromatic boost.
- Swap jalapeños for serranos for extra heat.
- Use smoked paprika or chipotle powder for smoky depth.
- Add fresh herbs like cilantro or chives before serving.
Tips
- Keep the mixture just below a boil for the most tender, juicy corn.
- If the sauce thickens too much, add a splash of milk to loosen it.
- Finish with lime and Tajín for a vibrant street-corn twist.
- Use fresh, peak-season corn for the sweetest, most flavorful results.
