Homemade Mexican Beef Chili

Instructions:

  1. Brown the ground beef in a large pot over medium heat; drain any excess fat.
  2. Add the onion, bell pepper, and garlic; cook for 3–4 minutes until softened.
  3. Stir in the beans, diced tomatoes, tomato sauce, and beef broth.
  4. Add chili powder, cumin, paprika, oregano, salt, and pepper.
  5. Bring to a simmer, cover, and cook on low for 30–40 minutes to deepen the flavor.
  6. Taste and adjust seasoning as needed.
  7. Serve hot with your favorite toppings like cheese, sour cream, jalapeños, or tortilla chips.

Variations

  • Add corn for subtle sweetness and extra texture.
  • Swap beef for ground turkey or chicken for a lighter version.
  • Add chipotle peppers in adobo for smoky heat.
  • Stir in a can of black beans for extra heartiness.

Tips

  • Longer simmering equals deeper, richer flavor — let it go as long as you want.
  • For thicker chili, simmer uncovered for the last 10–15 minutes.
  • Add a squeeze of lime before serving to brighten every bite.
  • Make it ahead — chili always tastes even better the next day.
