Hillbilly Gator Eggs

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the ground sausage, shredded cheddar, cream cheese, garlic powder, onion powder, paprika, and black pepper. Mix until fully incorporated.
  3. Divide the sausage mixture into equal portions and flatten each into a thin patty.
  4. Wrap each hard-boiled egg completely with the sausage mixture, sealing it evenly around the egg.
  5. Wrap each sausage-covered egg with two slices of bacon, securing with toothpicks if needed.
  6. Place the wrapped eggs on a lined baking sheet or a wire rack set over a baking pan.
  7. Bake for 25–30 minutes, or until the bacon is crisp and the sausage is fully cooked.
  8. Remove from the oven and let cool slightly before serving. Slice in half for presentation or serve whole.

Variations

  • BBQ Glazed Gator Eggs: Brush with barbecue sauce during the last 5 minutes for a sweet, smoky finish.
  • Spicy Cajun Style: Add Cajun seasoning and diced jalapeños or hot peppers for extra heat.
  • Cheese-Stuffed Core: Slice the eggs in half and add a bit of cheese inside before wrapping for an extra cheesy center.
  • Turkey Sausage Option: Substitute pork sausage with turkey sausage for a lighter version.

Tips

  • Use a wire rack when baking to allow fat to drip away and ensure evenly crisp bacon.
  • Keep the sausage layer even to ensure consistent cooking around the egg.
  • Make sure the eggs are fully sealed to prevent cracking during baking.
  • Let them rest for a few minutes after baking to help everything set before slicing.
