Instructions:
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the ground sausage, shredded cheddar, cream cheese, garlic powder, onion powder, paprika, and black pepper. Mix until fully incorporated.
- Divide the sausage mixture into equal portions and flatten each into a thin patty.
- Wrap each hard-boiled egg completely with the sausage mixture, sealing it evenly around the egg.
- Wrap each sausage-covered egg with two slices of bacon, securing with toothpicks if needed.
- Place the wrapped eggs on a lined baking sheet or a wire rack set over a baking pan.
- Bake for 25–30 minutes, or until the bacon is crisp and the sausage is fully cooked.
- Remove from the oven and let cool slightly before serving. Slice in half for presentation or serve whole.
Variations
- BBQ Glazed Gator Eggs: Brush with barbecue sauce during the last 5 minutes for a sweet, smoky finish.
- Spicy Cajun Style: Add Cajun seasoning and diced jalapeños or hot peppers for extra heat.
- Cheese-Stuffed Core: Slice the eggs in half and add a bit of cheese inside before wrapping for an extra cheesy center.
- Turkey Sausage Option: Substitute pork sausage with turkey sausage for a lighter version.
Tips
- Use a wire rack when baking to allow fat to drip away and ensure evenly crisp bacon.
- Keep the sausage layer even to ensure consistent cooking around the egg.
- Make sure the eggs are fully sealed to prevent cracking during baking.
- Let them rest for a few minutes after baking to help everything set before slicing.
