Instructions:
- Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
- Heat the olive oil in a skillet over medium heat. Add the onion and garlic and cook until softened and fragrant.
- Add the ground meat and cook until evenly browned, breaking it up as it cooks.
- Stir in the diced tomatoes, green chiles, cumin, chili powder, salt, and pepper. Simmer for 5 to 7 minutes to blend the flavors.
- Spoon the meat mixture into the flour tortillas, sprinkle with shredded cheese, and roll tightly into burros. Place seam-side down in the prepared baking dish.
- Pour the green chile enchilada sauce evenly over the burros and sprinkle with additional cheese if desired.
- Bake uncovered for about 20 minutes, until the sauce is bubbling and the tops are lightly golden.
- Serve hot with rice, beans, or sour cream on the side.

- Add refried beans to the filling for a creamier, heartier burro.
- Use shredded chicken or pork instead of ground meat.
- Top with diced onions or sliced olives before baking for extra texture.
