Instructions:
- Preheat oven to 375°F (190°C).
- In a large oven-safe skillet, heat olive oil over medium heat. Sauté sliced onions for 2 to 3 minutes until softened.
- Spread tortilla chips evenly in the skillet. Pour green chile sauce over the chips, gently tossing to coat lightly while keeping some chips crisp.
- Sprinkle diced green chiles evenly over the top.
- Layer Monterey Jack and mozzarella generously over the chips. Add queso fresco if using.
- Bake for 12 to 15 minutes, until the cheese is melted, bubbly, and lightly golden.
- If using eggs, fry them separately and place one on top of each serving.
- Garnish with fresh cilantro and serve immediately with sour cream if desired.
Variations :
- Add shredded chicken or chorizo for a heartier version.
- Use pepper jack cheese for added heat.
- Stir black beans into the sauce layer for extra protein.

- Do not oversoak the chips; a light toss preserves texture.
- Broil for the last 2 to 3 minutes to create golden, slightly charred cheese spots.
