Green Chile & Extra Cheese Chilaquiles

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. In a large oven-safe skillet, heat olive oil over medium heat. Sauté sliced onions for 2 to 3 minutes until softened.
  3. Spread tortilla chips evenly in the skillet. Pour green chile sauce over the chips, gently tossing to coat lightly while keeping some chips crisp.
  4. Sprinkle diced green chiles evenly over the top.
  5. Layer Monterey Jack and mozzarella generously over the chips. Add queso fresco if using.
  6. Bake for 12 to 15 minutes, until the cheese is melted, bubbly, and lightly golden.
  7. If using eggs, fry them separately and place one on top of each serving.
  8. Garnish with fresh cilantro and serve immediately with sour cream if desired.

Variations :

  • Add shredded chicken or chorizo for a heartier version.
  • Use pepper jack cheese for added heat.
  • Stir black beans into the sauce layer for extra protein.

  • Do not oversoak the chips; a light toss preserves texture.
  • Broil for the last 2 to 3 minutes to create golden, slightly charred cheese spots.
