Instructions:
- Preheat the oven to 375°F (190°C).
- Using a sharp knife, carefully cut a pocket into the side of each chicken breast, taking care not to slice all the way through.
- In a small bowl, combine the softened goat cheese, thyme, and parsley until evenly mixed. Stuff each chicken breast with the mixture, dividing it evenly. Secure with toothpicks if necessary.
- Season the exterior of the chicken generously with salt and freshly cracked black pepper.
- Heat the olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken for 4 to 5 minutes per side until golden brown.
- Transfer the skillet to the preheated oven and bake for 15 to 18 minutes, or until the internal temperature reaches 165°F (74°C). Remove from the oven and allow the chicken to rest for several minutes.
- While the chicken rests, prepare the reduction. In a small saucepan over medium heat, sauté the minced garlic for about 30 seconds until fragrant.
- Add the blackberries, balsamic vinegar, honey, and chicken broth. Simmer for 6 to 8 minutes, gently mashing the berries as they soften and release their juices.
- Stir in the butter and continue simmering until the sauce thickens into a glossy reduction.
- Spoon the warm blackberry reduction over the stuffed chicken just before serving. Garnish with additional thyme if desired.
