Goat Cheese Stuffed Chicken with Warm Blackberry Reduction

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Using a sharp knife, carefully cut a pocket into the side of each chicken breast, taking care not to slice all the way through.
  3. In a small bowl, combine the softened goat cheese, thyme, and parsley until evenly mixed. Stuff each chicken breast with the mixture, dividing it evenly. Secure with toothpicks if necessary.
  4. Season the exterior of the chicken generously with salt and freshly cracked black pepper.
  5. Heat the olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken for 4 to 5 minutes per side until golden brown.
  6. Transfer the skillet to the preheated oven and bake for 15 to 18 minutes, or until the internal temperature reaches 165°F (74°C). Remove from the oven and allow the chicken to rest for several minutes.
  7. While the chicken rests, prepare the reduction. In a small saucepan over medium heat, sauté the minced garlic for about 30 seconds until fragrant.
  8. Add the blackberries, balsamic vinegar, honey, and chicken broth. Simmer for 6 to 8 minutes, gently mashing the berries as they soften and release their juices.
  9. Stir in the butter and continue simmering until the sauce thickens into a glossy reduction.
  10. Spoon the warm blackberry reduction over the stuffed chicken just before serving. Garnish with additional thyme if desired.
