Instructions:
- In a small saucepan, combine the pineapple juice, diced pineapple, minced pepper, honey, vinegar or lime juice, garlic powder, and salt.
- Bring to a gentle simmer over medium heat.
- Cook for 5 to 7 minutes, allowing the mixture to reduce slightly and the peppers to soften.
- Stir in the butter until melted and the glaze becomes glossy.
- Let cool for a few minutes; it will thicken slightly as it rests.
- Drizzle over meats, seafood, tacos, vegetables, or anything that could use a sweet–spicy tropical lift.
Variations
- Blend the finished glaze for a silky, sauce-like consistency.
- Use serranos for medium heat or habaneros for tropical fire.
- Add grated ginger for extra zest.
- Substitute honey with agave for a lighter sweetness.
- Add a splash of soy sauce for a savory, island-style twist.
Tips
- For extra thickness, simmer a few minutes longer until the glaze lightly coats a spoon.
- If using habanero, remove seeds and membranes for a more manageable level of heat.
- Make it ahead and store in the refrigerator; warm gently before drizzling.
- Use fresh pineapple whenever possible for the most vibrant flavor.
- Brush onto grilled meats during the last few minutes of cooking for caramelized edges.
