Easy Shepherd’s Pie

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, cook ground beef with onion and garlic until browned. Drain excess fat.
  3. Stir in tomato paste, flour, Worcestershire sauce, and beef broth. Add mixed vegetables, then simmer until thickened.
  4. Spread the meat mixture evenly into a baking dish.
  5. Top with mashed potatoes, spreading them evenly to cover the filling. Sprinkle cheddar cheese over the top.
  6. Dot with butter and bake uncovered for 25–30 minutes, until the top is golden and the filling is bubbling.
  7. Garnish with fresh parsley before serving.

Variations

  • Use lamb for a more traditional shepherd’s pie.
  • Add sautéed mushrooms for extra depth.
  • Swap cheddar for Irish cheddar or Gruyère for a richer topping.

Tips

  • Stir cream cheese into the mashed potatoes for an ultra-creamy topping.
  • If the mashed potatoes are too thick, add a splash of milk for easier spreading.
  • Let the pie rest for 10 minutes before serving—it helps the layers set beautifully.
