Instructions:
- Preheat the oven to 350°F (175°C).
- Brown the ground beef with the diced onion. Drain excess grease.
- Stir in the taco seasoning, soup, sour cream, and Rotel. Mix until creamy and well combined.
- Add a thick layer of crushed Doritos to the bottom of a baking dish.
- Spread half of the beef mixture over the chips.
- Add a layer of shredded cheese.
- Repeat with more Doritos, the remaining beef mixture, and another layer of cheese.
- Bake for 20–25 minutes, or until the cheese is melted and bubbly.
- Top with diced tomatoes, jalapeños, or cilantro if desired.

- Swap in ground turkey or shredded chicken for a lighter twist.
- Add black beans or corn to the beef mixture for extra texture.
- Use pepper jack cheese for a spicier finish.

- Crush the Doritos just slightly so you keep some bigger pieces for texture.
- Let the casserole rest for a few minutes after baking to help the layers set.
- If you prefer a crispier top, sprinkle extra Doritos on the surface during the last 5 minutes of baking.
