Dorito Casserole

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Brown the ground beef with the diced onion. Drain excess grease.
  3. Stir in the taco seasoning, soup, sour cream, and Rotel. Mix until creamy and well combined.
  4. Add a thick layer of crushed Doritos to the bottom of a baking dish.
  5. Spread half of the beef mixture over the chips.
  6. Add a layer of shredded cheese.
  7. Repeat with more Doritos, the remaining beef mixture, and another layer of cheese.
  8. Bake for 20–25 minutes, or until the cheese is melted and bubbly.
  9. Top with diced tomatoes, jalapeños, or cilantro if desired.

  • Swap in ground turkey or shredded chicken for a lighter twist.
  • Add black beans or corn to the beef mixture for extra texture.
  • Use pepper jack cheese for a spicier finish.
  • Try Cool Ranch, Spicy Nacho, or even Flamin’ Hot Doritos for fun flavor variations.

  • Crush the Doritos just slightly so you keep some bigger pieces for texture.
  • Let the casserole rest for a few minutes after baking to help the layers set.
  • If you prefer a crispier top, sprinkle extra Doritos on the surface during the last 5 minutes of baking.
