Crockpot Chicken Cacciatore

Instructions:

  1. Place the sliced onions, peppers, and garlic in the bottom of the crockpot.
  2. Season the chicken with salt and pepper, then set it on top of the vegetables.
  3. Pour in the diced tomatoes, marinara, broth, oregano, basil, and thyme.
  4. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is tender.
  5. Remove the chicken, shred it or leave it whole, then return it to the sauce.
  6. Serve over pasta, rice, or mashed potatoes and garnish with fresh parsley.

• Add mushrooms for classic cacciatore depth.

• Use fire-roasted tomatoes for a smoky twist.
