Instructions:
- Preheat the oven to 375°F (190°C). Lightly grease a baking dish.
- In a skillet over medium heat, brown the ground beef with the diced onion until fully cooked. Drain excess grease.
- Stir in the taco seasoning and drained diced tomatoes with green chiles. Simmer for 2 to 3 minutes, then remove from heat.
- In a bowl, mix the refried beans, sour cream, and cream cheese until smooth and creamy.
- Place tortillas in the bottom of the baking dish, tearing them as needed to fit evenly.
- Spread half of the creamy bean mixture over the tortillas.
- Add half of the beef mixture and sprinkle with a portion of the shredded cheese.
- Repeat the layers, finishing with cheese on top.
- Bake uncovered for 30 to 35 minutes, until hot, bubbly, and lightly golden.
- Let rest for 5 minutes before slicing. Garnish with herbs and diced tomatoes if desired.
Variations
- Add a layer of cooked rice between the tortillas and beef for an even heartier casserole.
- Use ground turkey or chicken instead of beef.
- Swap refried beans for black beans mashed slightly for more texture.
- Add sliced jalapeños or a pinch of cayenne for extra heat.

- Let the casserole rest before cutting so the layers hold together.
