Cream Cheese Corn Casserole

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the cream cheese, sour cream, melted butter, egg, garlic powder, onion powder, salt, and pepper.
  3. Fold in the corn and 1 cup cheddar cheese.
  4. Spread the mixture evenly into a greased baking dish.
  5. Top generously with additional cheddar cheese.
  6. Bake for 35–40 minutes, or until golden, bubbly, and slightly browned on top.
  7. Let cool for 5 minutes before serving.

Variations

  • Add diced jalapeños or green chiles for a spicy twist.
  • Stir in crumbled bacon for extra richness and smoky flavor.
  • Use pepper jack cheese for a zesty kick.
  • Add a handful of crushed Ritz crackers or breadcrumbs on top for a crunchy finish.

Tips

  • Soften the cream cheese fully so it mixes smoothly.
  • If using frozen corn, no need to thaw—just stir it in.
  • Let the casserole rest a few minutes to help it set before scooping.
  • For extra color, broil the top for 1–2 minutes at the end.
