Instructions:
- Add the cherries, jalapeños, sugar, honey, lemon juice, vinegar, and salt to a saucepan.
- Heat over medium, stirring occasionally until the cherries soften and release their juices.
- Lightly mash the cherries to your preferred texture.
- Simmer for 10–12 minutes, or until the mixture thickens slightly.
- For a firmer spread, stir in the cornstarch slurry and simmer for 1–2 minutes more.
- Let the mixture cool completely — it will thicken further as it cools.
- Store in jars in the refrigerator for up to 2 weeks.
