Instructions:
- Preheat the oven to 375°F (190°C).
- Brown the ground beef with the diced onion in a skillet; drain excess fat.
- Add the garlic, taco seasoning, Rotel, and half of the enchilada sauce. Simmer for 3 minutes.
- Lightly grease a baking dish and layer tortillas across the bottom.
- Spread 1/3 of the beef mixture over the tortillas and add a layer of cheese.
- Repeat two more times: tortillas → beef → cheese.
- Pour the remaining enchilada sauce over the top and finish with a final layer of cheese.
- Bake for 25–30 minutes, or until bubbly, melty, and lightly golden.
- Let rest for 5 minutes before slicing and adding your favorite toppings.
