Cheesy Ranch Oven-Roasted Potatoes

Instructions:

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the potatoes with olive oil, ranch seasoning, garlic powder, black pepper, and a light pinch of salt.
  3. Spread the potatoes evenly on the baking sheet in a single layer.
  4. Roast for 35 to 40 minutes, flipping halfway through, until the potatoes are golden brown and crispy.
  5. Remove the baking sheet from the oven and sprinkle the cheddar cheese evenly over the potatoes. Add mozzarella if using.
  6. Return to the oven for about 5 minutes, until the cheese is fully melted and bubbly.
  7. Garnish with chopped parsley or chives if desired and serve hot.

Variations

  • Add cooked, crumbled bacon for a loaded potato version.
  • Use pepper jack cheese for a spicy twist.
  • Toss the potatoes with smoked paprika for extra depth.
  • Finish with a drizzle of ranch dressing for extra creaminess.

Tips

  • Cut the potatoes evenly so they roast at the same rate.
  • Do not overcrowd the pan to ensure maximum crispiness.
  • Use freshly shredded cheese for the best melt and flavor.
  • For extra crunch, broil for the last 1 to 2 minutes while watching closely.
