Instructions:
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, toss the potatoes with olive oil, ranch seasoning, garlic powder, black pepper, and a light pinch of salt.
- Spread the potatoes evenly on the baking sheet in a single layer.
- Roast for 35 to 40 minutes, flipping halfway through, until the potatoes are golden brown and crispy.
- Remove the baking sheet from the oven and sprinkle the cheddar cheese evenly over the potatoes. Add mozzarella if using.
- Return to the oven for about 5 minutes, until the cheese is fully melted and bubbly.
- Garnish with chopped parsley or chives if desired and serve hot.
