Instructions:
- Slice the jalapeños into 1/4-inch rings and set aside.
- In a large pot, combine the sugar, apple cider vinegar, turmeric, garlic powder, cayenne if using, and mustard seeds.
- Bring the mixture to a boil, then reduce heat and simmer for about 5 minutes to form a syrup.
- Add the jalapeño slices and simmer for 4 to 5 minutes, until they darken slightly and become glossy.
- Using a slotted spoon, transfer the jalapeños into clean jars.
- Continue simmering the syrup for another 5 minutes, until slightly thickened.
- Carefully pour the hot syrup over the jalapeños, leaving about 1/4 inch of headspace.
- Seal the jars and refrigerate. The flavor improves after about one week.
Variations :
- Use a mix of jalapeños and serranos for more heat.
- Add sliced garlic or onion for extra depth.
- Substitute part of the sugar with honey for a richer sweetness.
Tips :
- Wear gloves when slicing jalapeños to protect your hands.
- Let the jars rest in the refrigerator for at least a week for best flavor.
- The leftover syrup is excellent drizzled over fried chicken, cornbread, grilled shrimp, or stirred into barbecue sauce.
