Cajun Critter Bites

Instructions:

  1. In a large mixing bowl, combine the chopped shrimp, crab meat (or crawfish), cream cheese, cheddar cheese, green onions, Cajun seasoning, garlic powder, smoked paprika, black pepper, egg, breadcrumbs, and crushed crackers.
  2. Mix thoroughly until all ingredients are evenly incorporated and the mixture holds together.
  3. Shape the mixture into small, bite-sized balls.
  4. Roll each ball lightly in flour, ensuring an even coating.
  5. Dip each into the beaten eggs, then coat thoroughly in seasoned breadcrumbs.
  6. Heat oil in a deep skillet or fryer to 350°F (175°C).
  7. Fry the bites in batches for 3–4 minutes, or until golden brown and crisp on all sides.
  8. Remove with a slotted spoon and drain on paper towels.
  9. In a small bowl, whisk together mayonnaise, hot sauce, Cajun seasoning, lemon juice, and honey until smooth.
  10. Serve the Cajun Critter Bites hot with the dipping sauce on the side.
