Instructions:
- In a large mixing bowl, combine the chopped shrimp, crab meat (or crawfish), cream cheese, cheddar cheese, green onions, Cajun seasoning, garlic powder, smoked paprika, black pepper, egg, breadcrumbs, and crushed crackers.
- Mix thoroughly until all ingredients are evenly incorporated and the mixture holds together.
- Shape the mixture into small, bite-sized balls.
- Roll each ball lightly in flour, ensuring an even coating.
- Dip each into the beaten eggs, then coat thoroughly in seasoned breadcrumbs.
- Heat oil in a deep skillet or fryer to 350°F (175°C).
- Fry the bites in batches for 3–4 minutes, or until golden brown and crisp on all sides.
- Remove with a slotted spoon and drain on paper towels.
- In a small bowl, whisk together mayonnaise, hot sauce, Cajun seasoning, lemon juice, and honey until smooth.
- Serve the Cajun Critter Bites hot with the dipping sauce on the side.
