Instructions:
- Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Steam or microwave the broccoli and cauliflower until just slightly tender, then drain thoroughly.
- In a large bowl, whisk together the eggs, cottage cheese, Parmesan, garlic powder, onion powder, paprika, salt, and pepper.
- Fold in the broccoli, cauliflower, and shredded cheddar.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 35–40 minutes, until the top is golden and the center is set.
- Let the bake rest for 5 minutes before slicing for clean, neat pieces.
