Broccoli Cauliflower Cottage Cheese Bake

Instructions:

  1. Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Steam or microwave the broccoli and cauliflower until just slightly tender, then drain thoroughly.
  3. In a large bowl, whisk together the eggs, cottage cheese, Parmesan, garlic powder, onion powder, paprika, salt, and pepper.
  4. Fold in the broccoli, cauliflower, and shredded cheddar.
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. Bake for 35–40 minutes, until the top is golden and the center is set.
  7. Let the bake rest for 5 minutes before slicing for clean, neat pieces.
