Brisket Pimento Jalapeño Poppers

Instructions:

  1. Preheat smoker, grill, or oven to 375°F (190°C).
  2. Slice jalapeños lengthwise and remove seeds and membranes.
  3. In a mixing bowl, combine cream cheese, pimento cheese, cheddar, brisket, roasted red peppers, green onions, and all seasonings.
  4. Fill each jalapeño half generously with the mixture.
  5. Arrange poppers on a baking sheet or grill rack.
  6. Cook for 20–25 minutes, until the filling is golden, bubbly, and lightly browned.
  7. Optional: drizzle with honey or lightly brush with BBQ sauce during the last 3 minutes for a sweet, glossy finish.
