Instructions:
- Preheat smoker, grill, or oven to 375°F (190°C).
- Slice jalapeños lengthwise and remove seeds and membranes.
- In a mixing bowl, combine cream cheese, pimento cheese, cheddar, brisket, roasted red peppers, green onions, and all seasonings.
- Fill each jalapeño half generously with the mixture.
- Arrange poppers on a baking sheet or grill rack.
- Cook for 20–25 minutes, until the filling is golden, bubbly, and lightly browned.
- Optional: drizzle with honey or lightly brush with BBQ sauce during the last 3 minutes for a sweet, glossy finish.

- For the deepest flavor, smoke the poppers the entire time — brisket + smoke = perfection.
- Wear gloves when handling jalapeños to avoid irritation.
- Pack the filling tightly so it doesn’t bubble over as it cooks.
- Let poppers rest for 5 minutes before serving so the filling sets slightly.
