Instructions:
- In a saucepan, combine the blueberries, sugar, honey, lemon juice, lemon zest, and water.
- Place over medium heat and bring to a gentle simmer, stirring occasionally.
- Cook for 10–15 minutes, allowing the blueberries to burst and break down into a thick mixture.
- Lightly mash the berries for a chunky texture, or blend if you prefer a smoother consistency.
- Stir in the cinnamon, ground cloves, black pepper, and a pinch of salt.
- Continue simmering for another 5 minutes to deepen the flavor and allow the spices to infuse.
- If a thicker consistency is desired, stir in the cornstarch slurry and cook for 1–2 minutes until glossy and thickened.
- Remove from heat and allow the jam to cool—it will continue to thicken as it sets.
- Transfer to a clean jar and refrigerate until ready to use.
