Bog Witch Berries

Instructions:

  1. In a saucepan, combine the blueberries, sugar, honey, lemon juice, lemon zest, and water.
  2. Place over medium heat and bring to a gentle simmer, stirring occasionally.
  3. Cook for 10–15 minutes, allowing the blueberries to burst and break down into a thick mixture.
  4. Lightly mash the berries for a chunky texture, or blend if you prefer a smoother consistency.
  5. Stir in the cinnamon, ground cloves, black pepper, and a pinch of salt.
  6. Continue simmering for another 5 minutes to deepen the flavor and allow the spices to infuse.
  7. If a thicker consistency is desired, stir in the cornstarch slurry and cook for 1–2 minutes until glossy and thickened.
  8. Remove from heat and allow the jam to cool—it will continue to thicken as it sets.
  9. Transfer to a clean jar and refrigerate until ready to use.

Variations

  • Vanilla Berry Blend: Add a splash of vanilla extract for a smoother, dessert-like flavor.
  • Citrus Twist: Incorporate orange zest for a brighter, slightly sweeter profile.
  • Spiced Chai Version: Add a pinch of nutmeg or cardamom for extra warmth.
  • Low Sugar Option: Reduce sugar and rely more on honey for a natural sweetness.

Tips

  • Stir occasionally to prevent sticking and ensure even cooking.
  • Taste as you go and adjust sweetness or spice to your preference.
  • Allow the jam to cool completely before judging thickness—it firms up as it rests.
  • Store in an airtight container in the refrigerator and use within 2–3 weeks.
