Instructions:
- Preheat the oven to 375°F (190°C).
- Using a sharp knife, carefully slice a pocket into each chicken breast without cutting all the way through.
- In a bowl, combine the cream cheese, mashed blackberries, honey, lemon juice, and salt. Mix until smooth and well blended.
- Stuff each chicken breast with the blackberry cream cheese mixture, securing the opening with toothpicks if necessary.
- Rub the outside of the chicken with olive oil, then season evenly with salt, black pepper, paprika, and garlic powder.
- Heat a skillet over medium-high heat and sear the chicken breasts for 3–4 minutes per side until golden brown.
- Transfer the chicken to a baking dish and bake for 20–25 minutes, or until the chicken is fully cooked and juices run clear.
- Remove from the oven and let rest for a few minutes before serving. Remove toothpicks before plating.
