Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Using a sharp knife, carefully slice a pocket into each chicken breast without cutting all the way through.
  3. In a bowl, combine the cream cheese, mashed blackberries, honey, lemon juice, and salt. Mix until smooth and well blended.
  4. Stuff each chicken breast with the blackberry cream cheese mixture, securing the opening with toothpicks if necessary.
  5. Rub the outside of the chicken with olive oil, then season evenly with salt, black pepper, paprika, and garlic powder.
  6. Heat a skillet over medium-high heat and sear the chicken breasts for 3–4 minutes per side until golden brown.
  7. Transfer the chicken to a baking dish and bake for 20–25 minutes, or until the chicken is fully cooked and juices run clear.
  8. Remove from the oven and let rest for a few minutes before serving. Remove toothpicks before plating.
